I like making muffin pan thighs on a smoker. Basically, buy a pack of throwaway muffin/cupcake pans and poke a few holes in the bottom. Coat the inside of the pan with butter. Rub deboned chicken thighs with the rub of your liking (any of them with red pepper, chili powder, etc. Will be fine). Cook them on the smoker around 325 for an hour or so. Then, place Bbq sauce of your choice on the chicken and let it cook for another half hour or so. Hickory seems to be the best wood for these thighs

I've got the winner right here. Jim Buck Ross, long time MS Commissioner of Ag, used to go around the state grilling chicken while campaigning. Here's a recipe for the baste that he used:
Jim Buck Ross Chicken
2 cups cider vinegar 1 cup of veg oil 4 Tbs salt 1.5 Tbs tabasco sauce .5 Tbs red pepper flakes or cayenne 1 tsp garlic salt ¼ cup poultry seasoning
Bring to boil
Baste chicken frequently
Enough for 8 halves
